10/11/11 Katie's Healthy Eating Journal: Tuesday

A year ago today was my due date.  At 11:30 pm a year ago I began having contractions.  I had no idea that in 24 hours my beautiful baby boy would be born!  It's so exciting because my best friend is due in two days as well.  It is incredible to share such a memorable occasion around the same time of year with her.  Every time I check my phone I'm on pins and needles! 

On Saturday when we celebrated FJ's birthday he had his first "real" bite of pure sugar.  He had a chocolate cake.  He truly is his mother's son: he picked at the cake and wasn't terribly interested in it.  He had maybe four little bites but you should've seen the explosion the next morning!  That poor child had slept in a diaper that was FILLED and leaking out the sides all night.  Again, it's amazing how much our bodies react to sugar when we've never had it.  Doesn't it make you wonder how good can it really be for you?  His body clearly didn't agree with all that sugar.  It just reinforces the necessity that I want my son eating as many fruits, veggies, and natural foods as possible so he grows up to be a healthy eater. 

Breakfast -

1 cup Pumpkin Oatmeal

Banana

1 cup fat-free organic milk

1 cup coffee with 2 tsp. fat-free creamer

Snack -

JC Anytime Bar

Lunch -

Organic Bean and Cheese Burrito

Carrots and cauliflower

Snack -

Plum

Dinner -

JC Rising Crust Pizza

Salad (mixed greens, peppers, mushrooms) 2 tbsp. light southwestern ranch

Snack -

JC Key Lime Pie
